What gives olive oil its green color?

Have you ever wondered what gives fresh olive oil its green color?
The answer: carotenes and chlorophylls.

Carotenes provide the red/orange color, while chlorophyll is divided into chlorophyll A, which is green/blue, and chlorophyll B, which is green/yellow. The combination of these pigments gives the oil its color.
However, during storage, chlorophyll degrades, causing the color to change from bright green to yellow.

The most common fraud is altering the color of the oil by adding chlorophylls and carotenes, which is why, according to the IOC (International Olive Council), the color of the oil is not a determining factor in assessing its quality.
