"The Country House"
Here, gentle hills and magnificent olive trees are bathed in the soft light of the 37th parallel north. Inhabited since the Neolithic period, the contrada has long been a crossroads of civilizations and stories. Today, it is the perfect stage on which to carry out our mission.
At first, it almost felt like a game. The restoration of these places, guided by the canons of classic rural beauty, happened almost spontaneously. It was not a house in the countryside, but the house of that countrysideβit belonged to it. In this way, the greatest desire was fulfilled: to establish a symbiotic relationship with the place, to give to and receive from that warm, red soil.

Our olive groves
Life in the countryside moves slowly; it is the art of reading signs, watching the flight of birds, sensing the promise of rain, sun, and wind. We have become careful and precise fortune tellers of moons and droughts. Love for olive cultivation has shown us the way: we have integrated the pre-existing centuries-old olive trees with the planting of young ones. Seasons come and go, and today we care for them all.
The varieties
Siracusana
An indigenous variety from the province of Siracusa, a symbol of strength and adaptation to the Sicilian climate. Its distinctive trait is a persistent bitterness reminiscent of Avola almond.
Tonda Iblea
A cultivar typical of the Iblei Mountains, characterized by a perfectly rounded olive. It produces oils with an intense aroma of green tomato and freshly cut grass.
Biancolilla
A cultivar widespread throughout Sicily, appreciated for its versatility and its ability to produce light, sweet oils with a golden-yellow color.
Nocellara del Belice
One of the islandβs most prized cultivars, an excellence recognized both for oil production and as a table olive.
Nocellara Etnea
A cultivar from the Etna area, a testament to the extraordinary biodiversity of the volcanic territory. It expresses itself by producing an oil with a strong character and distinctive mineral notes.
Terroir
Terrain
Terrain
Our olives grow on predominantly limestone and marly-limestone soils, with components of red or brown earth on a calcareous base, typical of karst areas. This geological composition, combined with the permeability of the substrate, ensures optimal drainage and imparts distinctive mineral notes to the oils, giving structure and complexity to the final product.
Altitude
Altitude
The olive groves extend across terraced land between 290 and 350 meters above sea level, an ideal altitude that ensures beneficial temperature variations for the accumulation of aromatic compounds in the olives and provides natural protection from late frosts.
Exposure
Exposure
The strategic layout of our groves follows careful agronomic planning designed to enhance the characteristics of each cultivar:
North: this area is home to centuries-old Siracusana olive trees, living witnesses to the territoryβs olive-growing history, alongside Verdese and Nocellara plantings that benefit from a cooler exposure and gradual ripening.
South: the sunnier exposure hosts Tonda Iblea groves around 25 years old, at the height of their productive maturity, where optimal sunlight encourages the accumulation of aromas and the synthesis of valuable phenolic compounds.
East: young groves and centuries-old Siracusana olive trees coexist harmoniously, welcoming the first rays of the morning sun and benefiting from a gentle light that accompanies the ripening of the olives.
West: this exposure hosts Tonda Iblea, Nocellara, and Biancolilla plantings, cultivars that take advantage of afternoon light and evening breezes that help moderate summer temperatures.
